While foodgawking, I stumbled upon this post on Dine and Dish and decided I’d hop on the meal planning band wagon. But instead of planning meals for specific days of the week, I’ve decided to collect about a dozen or so recipes (to last me about 2 weeks until my next grocery store run) and buy the necessary ingredients. Depending on my mood and my schedule, I’ll defrost accordingly and still feel like I could grab a frozen pizza if I don’t feel like cooking.
Here’s what I’ve got lined up so far for the next two weeks:
Parmesean Chicken Salad
Roasted Salmon with Sweet n Hot Mustard Glaze
Mexican Lasagna
Pan-Cripsted Deviled Eggs on French Lettuces
Roasted Ricotta Roma Tomatoes
Yellow Rice and Beans
Carne Guisada
Baked Potato
Chicken and Bacon Risotto with Peas
