Artichokes Would Make a Great Scrabble Word
I work at a large university, so the students that I encounter at my job have recently discovered Scrabble on Facebook. Some of them are just discovering Facebook. Some of them just got on the internet. Scrabble has become a kind of Facebook epidemic. I prefer the board game version with the tiny wooden tiles and the face-to-face human interaction. That’s kind of, like, the whole purpose of playing a board game.
I had two cans of artichoke hearts and didn’t know what I wanted to do with them so I found a recipe for Artichoke Chicken. First I threw the drained hearts into the food processor along with a quarter of an onion and a small tomato. I used half the mayo it called for and substituted the other half with sour cream. I lightly salted the meat, then added the topping, baking at 375 for approximately 25-30 minutes.
I got inspired to make roasted potatoes after seeing The Perfect Complement on FoodLoveWriting.com. But, since I didn’t have rosemary, I decided to take a more italian approach. In addition to the 2 tbs of olive oil, I added 1 tbs of butter, 1 tbs of dried oregano, 1 tbs of minced garlic, 1 tsp of crushed peppercorn and a dash of salt.
Although delicious, this combination can feel a little overwhelming. So much flavor and substance, I feel like there should have been a break with some fresh veggies or a salad. But I had neither and there wasn’t much of a complain from the boyfriend – and he’s all I’m really trying to please anyway.
