These Cookies Inspired Me To Blog, Is That Sad?

I couldn’t muster enough inspiration or energy to make anything special tonight – so when I found this recipe on Flourless Peanut Butter Cookies that consisted of only 3 ingredients I thought, Hey, I have crunchy peanut butter and an unrelenting sweet tooth, let’s do this!

3 Ingredient Peanut Butter Cookies or Exactly Why You Now Have Diabetes

These cookies don’t look like much and they don’t take much to make but they pack a real sweet punch that will knock any insomniatic college student right off their Ikea computer chair.

But, since the recipe only yields 6 servings and my eyes are perpetually bigger than my stomach, I doubled it. Duh.

  • 1 cup sugar (I used Splenda because it’s finer and it makes me feel like I made a healthy choice)
  • 1 cup light brown sugar
  • About 16oz of peanut butter (I used the crunchy version, feel free to experiment)
  • Splash of vanilla (about 1 teaspoon or so)
  • 2 eggs

Throw it all together and proceed with the original recipe. Granted it’s not technically 3 ingredients, but if you’re a dedicated fattie like myself, you can make room for more.

I lied. I have completely mundane stuff to share.

I sold my car about a week ago and am in the market for a Honda Fit Sport. This will be the first car that I’ll be purchasing at my own expense and it’s a larger undertaking than I had anticipated.

I’d actually be content without a car but Orlando is probably the least pedestrian/public transport friendly city on the planet (and it’s a shame because I firmly believe that the automotive industry is an elaborate consumer sham). But I have to admit, the Honda Fit is adorable and so much fun to drive. I sort of have my heart set on getting one.

I’m also really broke. A collection of unexpected expenses has left me strapped for cash and breathing kind of funny. I know it’s a chorus that all of America is singing, so I feel kind of validated that I’m not alone in my brokeness but it doesn’t make it any easier.

But the real regret I have about ignoring the blog for so long is losing touch with so many like-minded bloggers. And you, dear reader, thanks for letting me loiter on your blogroll and creep in your RSS reader. I appreciate your visits.
