Bacon Wrapped Salmon w/ Honey Garlic Vinaigrette on Asparagus
Homemade Italian dressing combined with about 2 tbs of honey, 1 tbs of thyme and chopped garlic. Drizzled over 1/2 lb of asparagus and grilled in my gas oven for about 2 – 5 minutes at 400 degrees. Broiled it for another minute or so on low for good measure. Divine!
Last night’s dinner was ready in 20 minutes: Bacon Wrapped Salmon via the November issue of Allyou 2009. I substituted arugula with spinach and probably should have wrapped a second piece of bacon around the salmon instead of the suggested one. After all, it’s bacon, it’s totally ok to be all willy-nilly about it. I used maple bacon which I think really added a special sweetness to the meal.
Don’t forget an ice-cold mug of beer!
