Popcorn Shrimp w/ Sweet Potatoes

This small meal was exhausting

I was very tired because I double breaded every single one of those little suckers. I suddenly remembered I hate breading things.

The sweet potato side was originally a Publix card recipe that called for parsnips (I had to google it while standing in the produce aisle) and fresh rosemary. Neither of which were at this crappy Publix where they put the dairy next to the seafood and the cakes right by the exit. Who does that? Anyway, I decided it’d just be a sweet potato and onion side dish drizzled with balsamic vinegar, sprinkled with dried rosemary and salt, then baked at 450 degrees for about 25 minutes.

And I saw that it was good.
